Our balsamic vinegar is one of a kind! Produced only from organic and biodynamic grapes, with no additives. The must is cooked with wisdom and knowledge, keeping the key parameters under control, then aged in barrels made of the proper wood for each stage.
Extra Vecchio label is aged over 25 years, which gives an amazing density and complexity. To be tried with our finest Parmigiano, fresh fruit, ice cream, or even better, tasted alone!

It is produced by aging only the acetified cooked must contained in barrels, all rigorously different from each other both for the type of wood and for the size. It follows a particular maturation process that gives it recognizable properties and aromas.

The perfect harmony between cooked must and wine vinegar is suitable for the most demanding consumer. This Balsamic Vinegar of Modena IGP is very dense, obtained only from typical red Organic and Biodynamic grapes such as Lambrusco or Sangiovese. The long aging in oak barrels improves the overall harmony. A delicious dressing that goes well with meat dishes but above all with aged cheeses, fruit, ice cream, sauces, rice, soups, eggs.
