Only native Reggiana Red cows provide the milk for this iconic cheese. All the animals are reared on the farm following the principles of biodynamic agriculture, therefore only natural products are used in the crops, there is great attention to the animals wellness that feed on the products and in the pastures of the company integrated with certified organic feed.
The horns of the animals are kept and the dominant heads are managed through the wide open spaces and in the stable. The cheese is produced in a trusted dairy, exclusively with the company's milk and according to its dictates.
